This made 3 hearty sandwiches:
1 can tuna
2 hard boiled eggs
2 tbsp capers
1 tbsp dill
Mayonnaise to taste
Salt and pepper to taste
Sliced tomatoes (I used my leftover grape tomatoes
Herbed mixed greens
6 slices whole wheat toast
Slice in half, pack in baggies, and you’re ready for a picnic in Prospect Park. (Baby carrot snack, optional)
So, my last blog ended rather abruptly. My pancetta was delicious and nobody died of Botulism. I cooked it in some pasta carbonarra.
This next phase of the blog will not involve books but will be a paean to salad. I’ve been feeling a bit chunky from all the exotic treats and am going to take a break with some healthy, summer friendly greens and the like.
My first adventure was a quick throw together job. I didn’t even slice my carrots.
