Summer of Salad – Potato Salad

Also from the Fourth of July:

About 2.5 lbs red potatoes, cut into cubes, and boiled until just tender

3 stalks of celery, cubed

1/2 of a medium Vidalia onion, cubed

4 hard boiled eggs, cubed

About 2 heaping tbsp of mayonnaise and the same of dijon mustard

Salt and pepper to taste
