Tri-color baby potatoes, sliced and boiled until just tender
Green beans, steamed until just tender
Sliced hard boiled egg
Salt and pepper
Mix the lemon juice, olive oil, mustard, and oregano to make the dressing. Arrange the ingredients artfully, or toss them together willy nilly. Drizzle with a small amount of the dressing.
If you prefer, you can substitute canned or fresh tuna for the anchovies, or you can blenderize the anchovies into your dressing.
