Summer of Salad – Spicy Quinoa


1 cup quinoa, cooked according to the package
1 tomato, chopped
1 cucumber, chopped
1 jalapeno, seeded, deveined, and minced
1/4 of a medium red onion, chopped
1 avocado, chopped
A splash each of olive oil and red wine vinegar
Salt and pepper to taste

Mix everything together except the avocado (to prevent it from getting mushy). Top with avocado and serve.
