Summer of Salad – Cherry Balsamic Marinated Steak

About 1/2 lb skirt steak

About 12 cherries, pitted and sliced in half

About 1/2 cup red wine

About 1/4 cup balsamic vinegar

About 1/4 cup olive oil

2 cloves garlic

1/8 of a red onion, minced

Salad greens

1 plum tomato, sliced

1/2 cucumber, sliced

About 12 additional cherries, pitted and sliced in half

Mix everything from steak to red onion in a zip lock back.  Mash the cherries into the steak to release as much of the juice as possible.  Marinate overnight.  Pre-heat the broiler with the pan still in there.  Carefully put your steak onto the hot pan.  Cook to the desired level of doneness.  I generally aim for 3 minutes per side (flipping only once) and then I let it rest for 5-10 minutes, but I like my steak rare.  Slice the into strips and serve over the salad greens.  We also poured some of the steak juices over our salads, and that was delicious too.
