Pan Fried Cod With Almond Tarator
1 thick slice of rustic bread, crusts trimmed
1 1/4 cup blanched almonds
2 garlic cloves
1/2 tsp cinnamon
1/4 cup white wine vinegar
1/3 cup olive oil
1 tbsp olive oil
salt and pepper to taste
For the Tarator – Soak the bread in a bowl of water and wring out as much of the excess as you can. Put it in food processor with remaining ingredients and make a paste – season with salt and pepper to taste. This will continue to thicken over time, so you may want to add some warm water right before serving. It should be the consistency of a nice, creamy sauce.
For the fish, heat the tbsp of olive oil over medium high heat. Sear the fish for 3 minutes on each side or until just cooked through. Salt and pepper to taste and serve hot topped with the tarrator.
I didn’t catch my fish fresh the same day the way our villains did, but they were pretty tasty all the same. We served ours with boiled red and blue potatoes and steamed green beans on the side. The almond tarrator was delicious spooned over the entire plate.
